The opportunity:
Global Talent 2020 are proudly working with our Edinburgh-based Bar and Restaurant client for their well-established and multi-faceted venue in the heart of the capital seeking a General Manager to help drive their operation and lead their boutique venue.
The operation consists of a newly refurbished country pub style 100 cover restaurant and bar, serving classic Scottish casual dining food in a cosy and warm environment. The bar serves real ales, wines, spirits, and whiskies.
You will manage a small team of 15-17 across FOH and BOH and be responsible for driving the sales, the guest experience, and the staff engagement through establishing SOPs and being a role model for the rest of the team.
There are ambitious expansion plans with 5-7 self-catering bedrooms being built next door and a 170-cover private function suite that will host weddings and parties.
The ideal candidate must be decisive and be able to contact suppliers, deal with guest complaints and queries and any issues that arise from the day-to-day business.

The role:
Global Talent 2020’s client will require the General Manager to launch and drive the business, recruiting, training, and managing the diverse team across the site. You will be responsible for ensuring the management team has all the tools to deliver a high standard of service and operations. This well-appointed food and drink concept will require a proven volume F&B-led General Manager candidate with sound hands-on operational experience with wet/dry services. You will need to be very customer-facing and lead by empowering your team and creating a memorable customer journey. You must possess an eye for detail and have sound commercial nous, cellar management, stock ordering processes and expenditure controls.
You will manage the staff across all areas as required. Great understanding of health & safety, training, and development of others, as well as possessing first-class communication skills are prerequisites for this diverse and fast-paced role with our ambitious growing client.

This is a multi-tasking, challenging role, in an amazingly presented environment, so it will need someone used to leading by example in an operation at all times. Quality understanding of all areas of a similar casual country pub-style bar and restaurant operations are key skill set required by the Global Talents 2020 client for this opportunity.
