The opportunity:
Global Talent 2020 are proudly working with a Luxury historic hotel estate near the Scottish borders. They are looking for a Head Bartender to join and lead their luxury facilities at their hotel estate. Our client is looking for a passionate mixologist to drive the standards of the venue ensuring that the reputation and gravitas are always upheld.
The wet side of the business is exceptionally busy and popular, with a wide-ranging cocktail menu and newly refurbished bars to serve them from. There are 7 different bars and restaurants with unique menus and atmospheres.
From historic library bars with roaring fires and the best whiskies on offer in Scotland to rosette-level fine dining restaurants to classic lounges to enjoy red wine and the view across the beautiful estate.
A background in luxury hotels is a must for this opportunity. You will be responsible for creating and adapting the seasonal cocktail menu and making a name for yourself in the UK hotel market as this is an award-winning and renowned venue.

The role:
Global Talent 2020’s client will require the Head Bartender to support the business in leading the bar team across the site. You will be responsible for assisting the management team in managing all front and back-of-house personnel and operations. You will need to be very customer-facing and lead by empowering your team and creating a memorable customer journey. You must possess an eye for detail, and have sound commercial nous, especially with a P&L, cellar management, stock ordering processes, and expenditure controls.
You will manage the staff across all areas as required through your management team. Great understanding of, health & safety, training, and development of others, as well as possessing first-class communication skills are prerequisites for this diverse and fast-paced role with our popular client.
The role requires a creative and ideas-driven mind to drive the revenue at the site and recognize the full potential of the venue. A sound understanding of how to drive top-line revenue is a must. The revenue is a mix of food and wet, so someone with great all-round knowledge and understanding of driving food and drinks service and quality is a must with an obvious focus on wet sales and how to increase high standards of drink quality and delivery.
This is a challenging site with many different factions to the operations, so someone who can step back and manage multiple areas of the business through effective delegation is a necessity.

Our client at Global Talent 2020, is looking for a positive approach type leader, with a focused, well-organized mind who possesses an approachable manner and is driven commercially.
This is a multi-tasking, challenging role, in an amazingly presented environment, so it will need someone used to leading by example in an operation at all times. Quality understanding of all areas of a volume bar and restaurant operations are key skill sets required by Global Talent 2020’s client for this opportunity.
Our client requires the ideal candidate to possess quality people engagement skills, with a “right-first-time” approach with customers, and colleagues alike. Sound understanding of P&L and costs is also highly desired, and this role would ideally suit a current Bar Manager or a senior Bar Supervisor candidate.
