Job Description

The role:

Global Talent 2020 are proudly working with our exciting Restaurant and Bars client for their beautifully appointed venues through the East side of Scotland, in appointing a new Executive Head Chef for overseeing the area of venues on this side of the country, with their quality focused diverse business operations. It is a multi-tasking, hands-on role, leading dedicated Head Chefs, and their brigades, producing high-end volume high street, fresh lead Restaurant menus across their varied portfolio of branded concepts. You will also be heading up the pre-opening of new sites, venues, and implementation of menus and teams in this fast-growing, successful business.

The person:

Our passionate, driven client at Global Talent 2020, is looking for a real leader in the kitchen, someone who will harness the talent of the brigades, utilize the fantastic kitchen facilities to their businesses advantage, for the end benefit of its customers, and standing in the marketplace across the East of Scotland. The ideal Executive Head Chef candidate must have had prior experience in producing fresh quality food, to a minimum 1 rosette culinary level standard, and had the experience of volume restaurants in the high street space. You will need to be highly approachable in personality, as you will be interacting with other senior department heads, all levels of your diverse teams, as well as customers, suppliers, and business associates. Our client requires an Executive Head Chef, that is keen to train, coach and mentor their teams, evolve services, menus, and food concepts, and further the reputation of the business as an Employer of choice.  

As the Executive Head Chef, you must be proven to be flexible, and highly adaptive in all your approaches to what you do, as you will also be highly involved with the company board of directors, senior operations team, and also projects team, as this business plans to double its business in the next three years, from 14 venues, to approx. 28 venues across Scotland.  

As Executive Head Chef, you must also be someone that not only has strong culinary ability, presentation skills, and food innovation skills, but someone that is an effective manager of the kitchen environment, including recent Covid 19 understanding changes, health, and safety, COSHH, RIDDOR, recruitment, training, and development, and possess strong P&L, cost & budgetary control skill sets. It is very important to our client at Global Talent 2020, that this person maintains the highest levels already in place for service quality and consistency.
