The role:

Global Talent 2020 are proudly working with one of Scotland’s leading independent luxury Boutique Hoteliers and specialized venue client at their stylish, countryside situated converted venue. Our client has a renowned reputation in the local area for its quality food and beautifully appointed dining, weddings, and private function experiences for its guests.

Set in a tranquil, private location our client is looking for a passionate Head Chef for their quality-focused food operations. It is leading a close dedicated Kitchen brigade, producing high-end popular food lunch and dinner menus, to a 2 Rosette culinary level standard. This will be across the main 80 cover restaurant, and function area of this quality-focused business.

You will with the assistance of the team, be leading a breakfast/lunch/dinner service over a 5-day week, with the delivery of seasonal produce to high-end Restaurant standards. Utilizing both classical and modern culinary methods to achieve this. Sustainability, and using the best ingredients Scotland has to offer, are key hallmarks of this business’s ethos.

The person:

Our passionate private client at Global Talent 2020, is looking for an experienced Head Chef talent who must be approachable at all times as this role will also entail discussing customers culinary requirements, you must possess a positive exhibit a “can-do” mentality, whilst being, a strong, fair leader to encourage a small brigade of dedicated talented chefs.

As Head Chef you will be responsible for the Kitchen budget, Food GP %, stock, rotas, recruitment, menu-planning, dish creation, Health and Safety, Food Hygiene, COSHH, HACCP, cook safe and all other local, legal, and legislative requirements, as required.

The ideal Head Chef candidate must have had prior experience of working in a quality food-led venue, specifically with rosette experience, or similar. You must be able to demonstrate good all-around classic/modern culinary technical skills, whilst being willing to grow, train and develop the rest of the brigade with this boutique organization, to help to make memorable dining experiences for its customers.
