Job Description

The role:

Global Talent 2020 are excited to be working with one of Edinburgh’s countryside set Hotels, beautifully positioned in its own grounds, and leisure facilities on the edge of the city. This busy venue is looking for a passionate Sous Chef for their quality-focused restaurant and banqueting operations.

The Sous role is part of a large, dedicated Kitchen brigade, producing high-level, fresh, popular food menus across the main restaurant, lounge, and bar areas of this established property.

Working in harmony with the newly appointed Executive Chef, the Hotel is on a culinary journey to aim for Bib Gourmand status in the next 12 months and then aim for further accolades in time, as the food culture and achievements of the team grow.

The person:

Global Talent 2020’s established client, is looking for a passionate about their craft, Sous Chef for this evolving kitchen journey, or, is also open to interest from a proven Junior Sous Chef, looking to step up to Sous level. Someone who will be always readily approachable, have a positive can-do mentality, be communicative, possess sound leadership skills, and a strong desire to grow, as the business will be ever-evolving; and there will be continued career development opportunities.

The ideal Sous Chef candidate must have had prior experience of working in a one to two Rosette food-led quality Restaurant or with similar hotel experience. You must be able to demonstrate good all-around classical technical skills, whilst managing costs, Food GP%, whilst balancing this with training and developing others within the team.

All Chef applicants will need to be able to demonstrate their technical abilities at the second interview stage.
