The role:

Global Talent 2020 is excited to be working with one of the leading luxury hotel and restaurant operators in the Scottish Borders at their beautifully appointed venue in the heart of this stunning private estate. This busy venue is looking for a passionate Sous Chef for their quality-focused 2 rosette-level restaurant and C&E operations.

The Sous role is part of a large, dedicated Kitchen brigade, producing high-level, fresh, popular food menus across the two main restaurants, lounges, spa areas and bar areas of this flagship Scottish hotel venue.

The person:

Our long-established client at Global Talent 2020, is looking for an existing Sous Chef talent in the kitchen or is open to interest from a proven Junior Sous, looking to step up to a Sous level. Someone who will be always readily approachable, have a positive can-do mentality, be communicative, authoritative on culinary practices and food trends, possess sound leadership skills, and exhibit a desire to grow, as the business is ever evolving, and there will be continued career growth opportunities within the company.

The ideal Sous Chef candidate must have had prior experience of working in a volume two rosette level food operations, specifically with fresh food/ingredients experience. You must be able to demonstrate good all-around culinary technical skills, whilst helping manage costs and Food GP%. Whilst also actively training and developing others within the team, leading the brigade in the Exec and Head Chef’s absence.

All Chef applicants will need to be able to demonstrate their technical abilities at the interview stages.
