The opportunity:
Global Talent 2020 are proudly working with a prestigious fine dining restaurant and hotel located on an idyllic island in the Scottish Highlands to find a Chef de Partie for their operations of over 35 years.
The venue is Michelin-recommended and currently holds 3 AA rosettes. The menu boasts the very best of Scottish cuisine, with all ingredients grown and sourced locally.
You will be part of a strong kitchen team and be responsible for cooking to the very highest of standards, treating guests from around the world who visit Scotland for this very experience.
The property has 6 hotel rooms at a 5-star standard; however, expansion is planned for the near future.
State of the art live in is available and a chance to stay on the second most visited island in the world in 2023.

The person:
Our ambitiously growing client at Global Talent 2020, is looking for a future Sous Chef, and someone looking to grow their career over time in line with the company’s growth over the next few years. Someone who will help harness the talent of the diverse brigade, with the guidance of the senior chefs, and utilise the fantastic kitchen facilities, and the company’s reputation in the community to provide memorable fresh food experiences for its customers.
Ideally, our client is looking for a CDP or an experienced Commis Chef and is looking to step up into a Chef de Partie opportunity. The ideal candidate must have prior experience producing fresh quality food, to a minimum 2 rosette culinary level standard.
Experience of a volume restaurant or similar would be advantageous. You will need to be highly approachable as you will be interacting with other senior department heads, and with all levels of the site’s teams. You will be delivering popular fresh menu classics, and fresh-from-the-field-themed dishes in conjunction with the restaurant’s fantastic all-year-round setting and design concept.
Our client is looking for someone that is keen to learn, train, and develop themselves while assisting in evolving the sites food services, and established food quality consistency. You will be used to delivering quality food experiences for customers and possess on-going ambition to be part of our client’s business expansion in the UK.
As the Chef de Partie, you must be someone that possesses sound all-round culinary abilities, but also is an effective supervisor of the kitchen environment and sections. Experience of ordering processes, stock control measures, health, and safety, COSHH, RIDDOR, and training and mentoring of others are also desired, advantageous skills, for the role.
