Job Description

The role:

Global Talent 2020 are excited to be working with one of the Scottish Borders’ leading luxury 5 Star Hotel and Restaurant operators at their beautifully appointed, quality-focused venue, in the heart of this stunning private estate. This busy venue is looking for a passionate Head Chef for their quality-focused 2 rosette level main restaurant, C&E operations, in-room dining, and clubhouse operations.

The Head Chef role is part of a large, 30-plus strong dedicated Kitchen brigade, producing high-level, fresh, popular food menus across the restaurant outlets, as well as the aforementioned, with lounges, large spa areas, and two bar areas of this flagship Scottish hotel venue.

The person:

Our long-established client at Global Talent 2020 is looking for an existing Head Chef or Executive Sous Chef in the kitchen, looking to step up to this level. Someone who will always be readily approachable, have a positive can-do mentality, be communicative, authoritative on culinary practices and food trends, possess sound Kitchen leadership skills, and exhibits a desire to grow. The business is ever evolving, and there will be continued career growth opportunities within the company.

The ideal Head Chef candidate must have had prior experience of working in a volume two rosette level food operations, specifically with fresh food/ingredients experience. You must be able to demonstrate good all-round culinary technical skills, whilst helping manage costs, and Food GP%. Whilst also be actively training and developing others within the team, leading the brigade in conjunction with the Executive Chefs, (although most likely daily operations will be your remit).

The venue is on a culinary journey of ever-continuing development, and it needs someone driven by all the above qualities, but primarily driven to succeed with the team in place to ever evolve the culinary experiences on site.

All Chef applicants will need to be able to demonstrate their technical abilities at the second interview stage.
